Cultivars
PERANZANA
Widespread in the northwest of the province of Foggia and also known as "Francese", "Provenzale" or "Provenzana", as it is believed to have been imported centuries ago from Provence by the troops of Charles of Anjou. It is a plant of medium vigor with an expansive habit, high productivity, and medium oil yield. The oil has a medium to intense fruitiness, distinctly herbaceous, with predominant notes of artichoke and fresh almond, and nuances of tomato. To the taste, it is moderately bitter and pungent, with an artichoke aftertaste. It has a medium-low oleic acid content and a medium content of total polyphenols.
CAROLEA
A typical cultivar of Calabria, the plant has high vigor with an upright and spreading habit, and the canopy is in the shape of an inverted pyramid and moderately dense. The oil has a medium-delicate fruitiness with noticeable herbaceous, apple, and artichoke notes. Bitter and pungent notes are of medium intensity, with an aftertaste of almond and artichoke. The color is green with yellow reflections, and the fluidity is medium.
LECCINO
This plant, widely cultivated in Italy and well-known abroad, has Tuscan origins. Resistant to Xylella Fastidiosa, it shows high vigor with an expansive habit, a voluminous and moderately dense canopy. The oil is characterized by a medium-light fruitiness, with notes of fresh olives and freshly cut grass. It has a balanced taste, with a predominant flavor of fresh almond and light sensations of grass/leaf and artichoke.
DOLCE AGOGIA
Widespread in the northern area of Umbria, particularly in the Trasimeno region,this is the cultivar that characterizes olive growing in the Perugia area. It shows medium vigor, with an upright habit and medium density of the canopy. The oil has a medium fruitiness, of the herbaceous type, with notes of almond, aromatic herbs, and artichoke. Bitter and pungent notes are of medium intensity, and the taste confirms almond, aromatic herbs, and resin flavors. Green in color, it soon turns yellow. The fluidity is medium.
